A Quick Getaway!

This past weekend we decided to hit the road. Danny wasn’t playing the keyboard on Sunday so we figured it was the perfect opportunity. After a late start on Saturday we went for an over night stay with Danny’s brother and family. We had a wonderful time and can’t wait to go back again!

Thanks, Steve and Meghann, for letting us invade your home on such short notice!

Bentley and his cousin Jordyn.

We didn’t get very many pictures– sadly, this is the best one!

What we’ve been up to.

This month seems to be flying by! Here are some things that we’ve been filling our time with:
-We recently extended our garden – it’s now 8’x8′! We are waiting until May to plant.

-Started seedlings indoors – a little late I know, but I am glad to announce that all of them have sprouted :)

-Celebrated Danny’s 27th birthday – yay!
This is the painting that I did for him — I am pretty rusty!

-I had a good pregnancy check-up – Marseille is quite an active wiggly baby!
-Had a great Easter weekend!
-We are re-decorating our bedroom – basically moving furniture around and making it more romantic!
-Bentley had a wonderful opthamology appointment – he is now in the realm of normal vision and his nerves and veins are pristine (the Dr’s word!). Now we are on yearly appointments!

This is Bentley playing outside while we worked on the garden!

We have had a relaxing busy month! What a change from last month!

A yummy dinner… and a fun night!

For dinner last night I pulled out some filet mignon from the freezer. I quickly researched online how to prepare them and printed off a recipe. When Danny got home, he suggested ordering pizza. I was game, since my allergies were acting up and I didn’t really feel like cooking. After the pizza was a no go, Danny asked what I was going to prepare. I told him the recipe was on the counter. He read it and asked me if he could make it. Surpised, I immediatley said, “yes!”

Along with the bacon wrapped filet mignon, I steamed some broccoli and potatoes for roasted garlic mashed potatoes. (We were just handed down this really cool steamer on Sunday and I’ve already used it twice this week! Yay for useful kitchen appliances!) Everything finished at about the same time, which is always nice. We sat down to a yummy meal that we both prepared!

The food..

The chef and critic: (He thought it was a little dry –it was cooked all the way through–the way I enjoy it! I thought it was really good!)

After dinner, we headed to Old Time Pottery and rummaged around — we always enjoy that. Bentley loved it. He would say dog or ball and sure enough there would be one. It was very cute.

Here’s the little guy at dinner… very greasy and dirty from his favorite dinner: Asparagus, Basil, Chicken, Potato Salad.

He is risen!

He has risen indeed! We had a wonderful Easter weekend! Care group was held on Good Friday, which was a very dark and stormy day. The meeting was such a great reminder of Christ’s love for us. It was a music worship night (which I loved!) and we spent time reflecting on our salvation and all that Christ willingly did for us! What a Savior!

After the Sunday morning meeting we stopped at home to change, and pick up our food, then we headed to the Minards. I made egg rolls using our family recipe, and a pinapple semifreddo. Ann made a wonderful italian beef dish with pasta and Easter bread, I don’t remember the name of them, but it was yummy.

I taught Ann how roll the egg rolls and the guys fried them before we started our Easter feast. Here are some pictures of our meal!

Easter bread — her dad used to make this bread in a basket shape with colored hard boiled eggs baked in it. I’m sure it was beautiful.

Beef with parsley, parmesan cheese and some other stuff rolled up in it! It was very good!!

Egg rolls — they turned out great. Danny said now that I can make them, he needs them more often!

Pineapple Semifreddo – this is a frozen dessert that I saw Giada make on Food Network. It was easy to make and very good– if I may say so myself.

Here is the recipe if you want to try it: http://www.foodnetwork.com/recipes/giada-de-laurentiis/pineapple-semifreddo-recipe/index.html

I wanted to get a picture of all of us, but I forgot!! Maybe next time. Thank you Minards for sharing your home and food with us!

Happy 27th Birthday, Danny!

Today is Danny’s 27th birthday. I really wanted to do something special for him. So, I surprised him with 27 different things. From special coupons, to encouragement, a love letter, and a cd with songs that hold special memories for us. For each of these type of ideas I tried to come up with seven things, because he was born on the seventh. Example: He loves candy, so I bought seven different kinds of candy. I have also been working on a painting for him and Bentley and I did a surprise photo shoot with Kelli Naisang! One of the 27 things was a post on my blog!

Happy Birthday, Danny!
Yay! I’m so excited to be able to share another birthday with you. We have lots of memories already! The first birthday that we spent together, we went out for pizza and ice cream. I dripped my ice cream everywhere — sadly not much has changed! I hope that this birthday brings many fond memories too!

Sweet husband, you are my greatest earthly treasure. I love being your wife and helpmate in life. You make my job very easy! Thank you for the way that you love and serve Bentley, me and soon Marseille. You are growing so much in your leadership and love for us.

I pray that this year will be very fruitful for you and that you will be able to look back at your next birthday and be amazed how God has changed you and used you for His glory.

Enjoy your special day, my love!
Love, Nikki : )

A word and dance from your son:
daDAA, daDAA!
Love, Bentley
